How do I get only one color in my photograph?

Like in some pictures some one has a greyscale image but one color showing…
Like everythings grey, but the blue eyes show.
How do they do that?

It is called color splashing. Best done in Photoshop. You make a copy of the original color photo, then make the top layer b&w. Then just use the eraser tool to bring the color through where ever you want it! That is the easiest way to do it in Photoshop. You can probably do it in other basic photo programs, but as a professional I have only used photoshop!
